Why we make it this way.
A brown butter blondie is really a chocolate chip cookie that decided to be a bar. Browning the butter takes it from sweet to butterscotch, and the brown sugar does the rest.
Before baking we ribbon Biscoff cookie butter through the batter and swirl it once, so every square has a spiced caramel seam running through it. Crushed Biscoff on top bakes into a thin crisp lid.
- Kerrygold European butter, slow-browned
- Gold Medal all-purpose flour
